Zucchini as noodles? Yes! If your vegetarian or just wanted to be a slight veggie lover this meal is a great way to snob those highly carb dry noodles. Low calorie and affordable vegetables. You will think how did I come up with this flat shaped zucchini? It’s simple, with the use of regular vegetable peeler peel them in lengthwise. It’s amazing because I really have a good time doing the shapes and with the flavor, oh my God! I just can’t believe it that it’s a good replacement for dry noodles. If you wish to try my recipe, here’s what you will need:
1 medium zucchini (peeled in lengthwise)
1 small carrot ( chopped thinly)
1 small onion (chopped)
4 cloves of garlic (crushed and chopped)
Handful of green beans
Handful of sweet peas
Salt and pepper
In a medium skillet, saute the onion and garlic until succulent in olive oil. Drop the carrots and green beans. Cooked for couple of minutes. Mix the zucchini and sweet peas. Salt and pepper to taste. Make sure that the veggies are not over cook. If you want it more tender, cook it for another minutes.
I did like the idea of having flat noodles, easy to cook and very light. In choosing the right zucchini, pick the ones that dark green and young they have lesser seeds and nice texture.
