Healthy Zucchini Flat Noodles

     Zucchini as noodles? Yes! If your vegetarian or just wanted to be a slight veggie lover this meal is a great way to snob those highly carb dry noodles. Low calorie and affordable vegetables. You will think how did I come up with this flat shaped zucchini? It’s simple, with the use of regular vegetable peeler peel them in lengthwise. It’s amazing because I really have a good time doing the shapes and with the flavor, oh my God! I just can’t believe it that it’s a good replacement for dry noodles. If you wish to try my recipe, here’s what you will need:

Ingredients
1 medium zucchini (peeled in lengthwise)
1 small carrot ( chopped thinly)
1 small onion (chopped)
4 cloves of garlic (crushed and chopped)
Handful of green beans
Handful of sweet peas
Olive oil
Salt and pepper

Directions

In a medium skillet, saute the onion and garlic until succulent in olive oil. Drop the carrots and green beans. Cooked for couple of minutes. Mix the zucchini and sweet peas. Salt and pepper to taste. Make sure that the veggies are not over cook. If you want it more tender, cook it for another minutes.

I did like the idea of having flat noodles, easy to cook and very light. In choosing the right zucchini, pick the ones that dark green and young they have lesser seeds and nice texture.

Healthy Spaghetti in Tomato Sauce with Moringa

       Spaghetti is one of my favorite anytime meals. But to make it healthy that’s one step different from any other regular pasta. I put moringa to add flavor and color in the meal. Like other green veggies these tiny leaves are compact with lots of vitamins so never underestimate them. Instead of canned tomatoes, I used fresh tomatoes and baked it. To make this yummy tummy filling pasta, here’s what you need:

Ingredients
1 kls. Of fresh tomatoes ( quartered)
1 head of garlic (crushed and halved)
Handful of dry noodles spaghetti
Handful of fresh moringa
Olive oil
Salt
Pepper

Directions
Step 1: Baked the fresh tomatoes with garlic, salt, pepper and olive oil for an hour and 15 minutes.

Step 2: Boiled 5-6 cups of water. Cooked the dry noodles 1 minute before it’s done or al dente.

Step 3: In a medium pot, pour the sauce and cook for couple of minutes. Sprinkle olive oil.

Step 4: Add the fresh moringa leaves. Dash salt and pepper.  Put the noodles and simmer for 2-3 minutes.

Cabbage with Homemade Honey Mustard Sesame Dressing

     What’s your favorite salad or slaw dressing? I like mine homemade aside from its low calorie, it’s also less processed. I choose my own style of honey mustard dressing with sesame seeds. I roasted the seeds to bring out the perfect aroma and flavor out of it. With the squeeze of fresh lemon feels like a great refreshment for the taste. It’s not just your ordinary cabbage. Typically, you mix mayonnaise to your salad but this time it will give you a healthier side of the dish. Here’s my easy way to prepare this fresh cabbage slaw:

Ingredients

1 medium sized green cabbage (thinly chopped)
1 small sized red cabbage (thinly chopped)
Handful of roasted sesame seeds

For the dressing:
2 tbsp. Of Dijon Mustard
2 tbsp. Of olive oil
1 tsp. Of roasted crushed sesame seeds
1 tsp. Of fresh squeezed lemon
1 tsp. Honey
Salt and pepper

Directions

Step 1:  In a medium bowl, put the fresh chopped white cabbage and red cabbage on the top.

Step 2:  Prepare the dressing in separate bowl and mix them well.
Drizzle the dressing to taste the cabbage. Sprinkle some roasted sesame seeds and mix well.

I have so much fun in this fantastic recipe. I will surely love to eat it many times in a week. Easy to make and a good alternative if you’re already tired of eating lettuce. Since cabbage is also affordable, if you have some chopped left over don’t throw it. You can always put it in the fridge and it’s already ready to go the next day. One thing I like about this meal is, you can control how many dressing you like to put on the cabbage. So light and so good. The next time you go to the supermarket try this crunchy and happy meal. Serve it with baked chicken or baked fish.

     I love whole foods when it comes to snack, avocado and strawberry are good choice to fill that rumbling tummy. Paired with  healthy nuts that are protein rich foods make your day better than eating junk foods. I know you might think that these type of fruits are expensive but they’re always other way to have it. If its not available, kiwi or any other fruits will do just don’t turn your head on those highly salty foods that not only bad for your heart but also your skin. Fruits will keep you hydrated and cleanse your body. They have great antioxidants that fight off the free radicals that destroy every healthy cells. Imagine? Stay young and always remember that fruits are everywhere you just have to choose to make a healthy day. If you’re not a fruity person, you can try consuming it with jams or marmalade but to get the best benefits, stick to the whole and nearest to the nature foods.

Stir fry Mixed Vegetables

     Vegetables are very versatile to cook. When it comes to stir fry, it should never be plain. I like the healthy colors in my plate which also means I like the basic spice and seasonings. No msg or flavor enhancer can beat the natures pure taste. Very handy and easy with time and mess. Yummy veggies and light diet with broccoli, carrots, corn to name a few. Chopping them in similar sizes make it easier to cook. This is perfect for side dishes or even main dish if you wish. To make my simple recipe you will need these:

Ingredients
1 small head of broccoli (chopped)
1 medium sized ear of corn
1 medium carrot (chopped)
1 small red bell pepper
1 small green bell pepper
6 cloves of garlic (crushed and sliced)
Olive oil
Salt and pepper

Directions
Step 1: In a small skillet, sprinkle olive oil and saute garlic. Cook the carrots, corn and bell pepper for couple of minutes.

Step 2: Sprinkle salt and pepper. Add the broccoli. Cook it for another minute and serve.

Optional: You can add sweet peas, spinach or even cabbage in case you don’t have broccoli. Having greens in your stir fry make it more nutritious in your buds.

Broccoli salad with Apple and Raisins

Broccoli is hailed as one of the super foods that has high benefits in preventing cancer. Because of its healthy and nutrient dense dark green color, there are many ways to cook or consume broccoli. What’s the best way? Aside from steaming, soups or stir fry awhile ago I decided to make healthy  salad. I used raw broccoli because I like their crunchy and texture. This is the great way to get most of the benefits and less waste. I ate this for lunch and I feel good about making it and would love to try again. So, today I’m gonna share my simple yet very healthy salad that you will make you realize that you don’t have to use romaine lettuce everyday to fill your salad plate.

Ingredients

1 medium head of broccoli raw ( chopped thinly)
1 medium apple ( cut in rectangular shape)
Handful of raisins
Olive oil
Salt and pepper

Directions

Step 1: In a medium bowl, mix together the chopped broccoli, raisins and apple.

Step 2: Sprinkle olive oil, salt, and pepper. Mix well and serve.

If you love nuts, you can sprinkle or crushed walnuts or sunflower on the top of your salad!

The Beauty of Lima Beans

Lima beans

     Lima beans are very excellent source of protein, antioxidants, fiber and heart healthy vitamins that our body needs to substitute or replace meat. The colorful and brilliant beans give an indication of  how nutritious they are. Instead of always eating poultry or beef these beans are great for stew, soups, coconut dishes and side dishes. I tried once to mash it and put butter and they’re really good.

They have stronger flavor compare to any other beans. You can saute it in garlic and onion and sprinkle olive oil. Including them in your diet will make a good impact in terms of managing or losing weight. Did you know that consuming good amount of beans in your diet helps your metabolism and skin tone? Yes! You might think why your pimples are not going away? It fall most of the time in our lifestyle and diet. So,  if you want to have a good complexion you should practice the habit of eating less meat but more plant base protein.

Beans are affordable and easy to cook. I prefer it most of the times, safer to eat because they don’t have a lot of preservative and its less process as well. Fresh beans are always the best. You don’t have to be vegetarian just to eat beans, you just have to learn to eat what’s good and fit.
